It's the The Sweet & Salty Pig's 3rd Anniversary this week! If you haven't tried their creative, comforting, inventive, and unbelievably delicious food yet... get there. They've rolled with the punches this last year; prioritizing safety, redesigning their business by utilizing online ordering and a drive through window. And somehow their food has only gotten more incredible through it all.
The first thing I tried on their menu had this sweet, smokey, tangy, spicy bacon jam on it. I knew immediately I wanted it on a pizza. I wanted it on everything. So this week they made us GALLONS AND GALLONS of their bacon jam. I tried this pizza a few different ways, adding roasted potatoes, bleu cheese, and other concoctions atop the bacon jam. But in the end, the one we liked the best, was the simplest. We put their perfect pork spread on a wood fired crust, topped it with cheese, and called it a day.
I asked Allison at the Pig for an ingredients list. Here is what she said: "Lots of bacon ends and pieces, onions, coffee, apple cider vinegar, Jim Beam Bourbon, maple syrup, brown sugar, black pepper, chipotle peppers in adobe sauce, cumin, garlic, and lots of time and love." Give it a whirl.
