Mussakhan is widely considered the national dish of Palestine, though it's also beloved throughout Jordan, across the Galilee regions and beyond. It's a simple dish. Onions, cooked until sweet and seasoned with sumac and spices like cinnamon, coriander, cardamom, and allspice. Warm spices, but nothing spicy. Sumac is a red berry that's dried and ground; producing a fruity and sharp crimson powder. As the seasonings melt into the onion, and crisp onto the chicken the flavors begin to branch off into this unbelievably satisfying and comforting dish. It's instantly evident why it's so widely loved. I hope you love our pizza version.
Serving Suggestion: It's perfect on its own, but served with some plain greek yogurt, maybe a squirt of fresh lemon or a drizzle of pomegranate molasses, it really goes next level. Choose your own adventure.
