My family's farm is primarily a dairy farm, but we've always had a diverse and eclectic mix of fruits and vegetables, chickens, turkeys, ducks, pigs, beef cattle, etc.... that we raise just for us. That is, until I started this pizza business here on the farm and we started sharing our beef. I've shared some of our pork in the past when I was raising Mulefoot hogs. This year my Dad raised a litter of Berkshire pigs.
They were raised on our cow yard, behind the gardens and next to the fruit trees. So they got a lot of fun tasty treats this year - all the windfall apples and ugly tomatoes. So many pears. They also got all of my broken pizza crusts and leftover ingredients (mac & cheese and any of my cream sauces are their most favorite leftovers). They ate like happy little kings and queens. I said every day that they ate better than me, and it's sad to say I'm not joking.
They were given the option to spend their summer and fall days soaking up the sun, but most often we found them burrowing into the straw inside for their 6 hour naps, or spraying water on each other and playing by their lil water spout.
They are friendly, docile animals that came into this world to be cared for, respected, and appreciated. So if you're a bad cook or someone to trims fat off your pork chops, this isn't the right pork for you.
Berkshires are a heritage breed, so the meat is a bit darker, more tender, and has more fat and marbling. It is our ultimate hope that our pork makes its way to people who appreciate the difference. People who value responsible farming practices just as much as they desire a pork chop and ham that tastes better than any restaurant's.
NOTE: Deposits are not refundable but they are transferrable - you may gift it, sell it, or share it with whomever you like. If you are unsure about freezer space, just make sure you have a freezer large enough to hold a big man if you had to stuff him in there.
