I love asparagus season!! We wait so long for vegetables to return to our region, and asparagus is always one of the first to wake up each Spring. In my muddled mind, it tastes like the whole Summer is still ahead of us.
Gemelli pasta is one of my favorites, and I've had it many times but the name never sticks in my head. It gets its name from Gemini. Twins. Because it gives the illusion of two noodles intertwined. My garlicky cream sauce really likes to nestle in its twists and bends. And it's the most perfect shape for fork stabbing, allowing you to get perfect bites with a spear of asparagus each time. I have gobs of creamy Belgiosio Burratta (made with milk from our farm) studded throughout this pasta dish.
This pasta tastes fresh and light with a fresh parsley, parmesan, and lemon zest gremolata as a garnish. I'm supposed to say this feeds two people with a nice side salad, and that no one should eat 2 lbs of pasta in a single sitting, but you do you. Ready to enjoy after just a few minutes in the microwave.
**This plant fiber container is oven safe, microwavable, and compostable - so there's no plastic. The freezer life on these is a few weeks if you're storing it in a heavily trafficked freezer. If it's in a deep freeze that you open less frequently, the natural bowls will keep well for a couple months!
