Back after a year-long break!
On a trip to Italy a few years ago, I had been awake for 22 hours when we touched down in Milan. I was delirious and immediately had what I can only classify as a serious boiling hot water incident with a bidet. I needed wine, pizza, and quite frankly probably a hospital. We prioritized pizza. Everyone was ordering the same pizza at this tiny shop up the street. It was was Prosciutto Cotto (cooked ham). I ordered the same.
What I was served was an unsmoked ham, fresh mozzarella, crushed tomatoes, and little shaved parmesan on top of a delicious wood-fired pizza crust. And it changed my life. My version here uses smoked ham and fresh mozzarella made with milk from our family's farm. It's a genuine taste of Italy, but Wisconsinified. It's simple. But it's perfect.
