We haven't made this pizza in over 6 years, but a few of our OG customers have been mentioning it lately. So I thought it might be time to reintroduce our Gyro Pizza. The beef (85%) and lamb (15%) is seasoned with onion, garlic, oregano, and rosemary, slow roasted, shaved thin, then layered on our wood-fired pizza crust (in this case let's pretend the crust is pita bread). I add fresh grape tomatoes, marinated briefly to bring out their brightness. Thinly sliced red onion, cheese, and oregano finish the pie. Make me proud and fold the whole thing up and eat it like a giant gyro.
I strongly suggest you get some Tzatziki cucumber sauce for dippin' or dunkin'. Its crucial for the perfect finished Gyro flavor. Hope you love it!
