Totally new this week. THAI-TALIAN. Beef Laab, or Larb, is my go-to Thai food order. It can be made with pork or chicken, but I always go for the beef. It's often categorized as a salad and served with little lettuce cups, some fresh lime, and a bunch of fresh herbs like mint and basil. I just love it so much. It's Laotian by origin, but often found in northern Thailand, too. And really, all across the US these days.
It can be quite spicy depending on where you get it. Mine here is a medium heat. The vibe is like you might get clear sinuses, but it won't hurt. This pizza doesn't really have a "sauce". Instead the minced beef is already saucy with a healthy dose of Sambal Oelek ground chili paste and soy sauce and lime. To keep the fresh salady vibe, we use a ton of fresh locally grown (Ernessi Farms) mint, basil, and cilantro and fold it all right into the saucy minced beef. I love pizzas like this; especially this time of year. We're just so ready for some big bold fresh flavors that feel a bit lighter as we head into Spring. And this is certainly that.
