SHAVED ITALIAN PROSCIUTTO
HOMEGROWN FIG JAM
CRUMBLED FETA
MOZZARELLA & PROVOLONE
WOOD FIRED ITALIAN CRUST
** I GREW THESE FIGS MYSELF. This semi-tropical fruit grew from the potted tree that lives outside the pizza shop all summer. Right here in Greater Van Dyne Metro area. I'm so proud. She (the tree) is currently taking her well-deserved Winter nap in the shed.
The best Italian cooks take super simple wholesome ingredients, and pair them with just a few accompaniments to make a dish absolutely sing. Like charcuterie boards where one bite of just the right combination can surprise and titillate the taste buds. Salty cured prosciutto, fruity fig jam, and some sharp feta keeps it simple enough to really enjoy the flavors of each topping. I froze a case of local blueberries a couple months ago, and I added them into the homemade fig jam to turn up the natural sweetness a little.
I wanted to make this a Christmas special, but I just couldn't wait that long. Please save this for the Holidays if you know of some family members who could appreciate a local fig. It took me and my tree all summer to get enough fruit for this one batch of pizzas. I'm glad the day has finally come. Hope you love it.
