Mussakhan is widely considered the national dish of Palestine, though it's also beloved throughout Jordan, across the Galilee regions and beyond. It's a simple dish. Onions, cooked until sweet and seasoned with sumac and spices like cinnamon, coriander, cardamom, and allspice. Sumac is a red berry that's dried and ground; producing a fruity and sharp crimson powder. As the seasonings melt into the onion, and crisp onto the chicken the flavors begin to branch off into this unbelievably satisfying and comforting dish. It's instantly evident why it's so widely loved. I hope you love our pizza version.
**$5 from every Mussakhan Pizza will be donated to World Central Kitchen, to help provide 120 meals for the surviving Palestinian civilians in Gaza who are suffering through famine. I'm doubtful anyone will have a problem with me trying to feed starving kids. But if some part of you does bristle from this, you might message me to say something like "there are hungry people in our own country" or my favorite, "food isn't political." While I've made no political statements with this gesture, I just ask that you read about literally any famine in history, and after that if you still believe food isn't political go ahead and reach out to me. I'll help you locate better research material. ☮
