I've tried to make this beautiful vegetable work on frozen pizzas for a decade. But water is the enemy of frozen food, and zucchini is basically a water balloon disguised as a vegetable. I gave up trying to make it work a few years ago. But last Summer I finally cracked the code, and I now understand zucchini on a super deep level. Keep your enemies close, and whatnot.
I shave the zucchini into almost see-through ribbons, then a sprink-e-dink of salt and one sleep, and then it gives up most of its water with a gentle squeeze. The moral of the story here is give up. Because once you do, the pressure is off and you'll get a good idea.
The zucchini ribbons are paired here with a hefty smear of a dill veggie-dip-style whipped cream cheese that's quite frankly so good that I could put it on a shoe and it would still slap.
