These beautiful organic bok choy are just little baby Chinese cabbages. Also known as pac choi, they loved being charred a bit on blaring 500º wood-fire grill and then instantly tossed in a bath of fresh hot chiles and garlic and ginger. These hot little guys get paired with some chicken that was smoked for us at Beck's Meat Processing. And a thin smear of some sweet but spicy gochujang pepper sauce ties everything together. Much thanks to our friends at Park Ridge Organics for the awesome pac choi. This is a celebration of amazing local food.
