I loved hot lunch SO MUCH as a kid. My mom was a great cook, and we were so lucky to eat most everything right off our farm. But the school lunch meant I could get exotic things out of a can, like fruit cocktail. And not unlike most of my peers, pizza day was my most favorite. When the hot lunch calendar would come out each month, we'd circle pizza day before sticking it on the fridge. And to this day, I think about that floppy rectangle from the 80's and 90's at least once a week. One could argue it was my first true love.
I went down a rabbit hole recently and ended up with the entire USDA School Food & Nutrition Guide from 1988 in my hands. That was the year the government decided ketchup was a vegetable serving! Which means, according to this guide, this cheese pizza was a complete nutritious meal all by itself. This book has every recipe our lunch ladies used throughout my youth. Even the "salisbury steak".
I recreated the sheet pan pizza in all its original glory just for you, and I cut it into the familiar rectangle. And yes, I used a kitchen scissors to cut it because if you don't it won't taste right. The main difference is that instead of using commodity cheese and lower-end ingredients, I upgraded everything to the best - including Grande mozzarella. I hope its everything you remember.
