Ernessi Farms in Ripon has been growing us all our basil for the past decade. And last week I got a call letting me know they just harvested their first ever batch of Lion's Mane mushrooms. I was so excited to turn them into a pizza.
Lions Mane is having a moment amongst the health food world, because it's prized for its anti-anxiety, dementia-fighting, stress-management properties. I can't legally tell you that this pizza will improve your life. But it has certainly improved mine. The mushrooms themselves are thick and meaty and a blank slate for flavor. We paired them here with some big flavored basil pesto, a drizzle of a sweet roasted red pepper sauce, and some whole roasted garlic. I LOVE how this one turned out. Hope you love it, too.
Leone (leh-OH-neh) is simply the Italian word for Lion.
