I went a wee bit overboard on the all-day caramelized onions for our French Onion Pizza this week. And then I had a single evening to figure out what to do with the rest of these sinfully delicious onions, using ingredients I already had on hand.
Dare I say this turned out better than the pizza, AND better than the O.G. French Onion Soup that we all find comfort in throughout the year. I got some local brie spread to play around with a couple weeks ago (its just the creamy spreadable inside of brie cheese without any of the funky notes - just the buttery part). Adding it to this is one of more genius moves I've ever made. This is not vegetarian, as I did use beef stock in the butter sauce, but I hope you love this this pasta dish. It's 2 lbs so I'm supposed to say it serves 2 people, but please listen to me when I tell you that you're not going to share this.
