You probably already know that in Mexico, an ear of corn is called Elote. In many regions they roast the corn, cover it in mayo and Mexican cheeses, some cilantro, lime, hot sauce, and eat it on a stick like the world's most delicious corn popsicle. Or you can eat it out of a cup. It's absolutely brilliant and folks across the US have fallen in love. This is our 8th season making this insanely popular pizza pie!
I grill an never-ending amount of sweetcorn over a wood fire, slice it from the cob, and toss it on a wood fired crust with some of my scratch-made white queso. Not spicy. I top it with cotija (like a Mexican parmesan), along with mozz and provolone. This one's super duper cheesy. I top it with some Tajin chili lime powder and some cilantro for brightness. It's sweet, so cheesy, and so awesomely comforting.
