CARAMELIZED SWEETCORN : CARAMELIZED RED ONION : PARMESAN CREAM SAUCE
When available, we use our own sweetcorn and red onions for this. Our cream sauce is just heavy cream and lots of parmesan. We top this one with our local mozzarella and provolone blend.
NOTE: We use red onions because of their mild onion flavor. Chefs will tell you they're only good raw (they are the best raw onion), but in a truly blind taste test, they also have the best caramelized flavor. When cooked, though, their characteristic purple turns this blue/jade color. And that can freak people out. But we're after flavor here, and we're looking for what grows best in our red clay soil. These onions win. So tell your kids they're unicorn berries or something. :-)
