Now I did. My favorite Spring/Fall salad is a wilted spinach salad with hot bacon dressing. So fast and easy to make and so satisfying. When Tracy at Olden Organics was telling me how much mature spinach she had, this salad kept knocking around in my head. Coincidentally I mistakenly had a full slab of bacon from Nueske's so it felt meant to be to at least try it.
When I was researching I learned that this recipe, or a variation of it, is one of the oldest recipes ever recorded, going back many hundreds of years. Kinda cool, right?
So I made a couple tweaks to my grandma's Hot Bacon Dressing (which was identical to her german potato salad recipe?) and it turned out incredible. I did have a really good store bought hot bacon dressing on standby if my GamGam version didn't come through for me, but she did. Bright and smokey and sweet. Super fresh spinach, and big nuggets of Neuske's, a layer of cheese and by golly I turned a salad into a pizza! Tell your friends.
