CRUMBLED RICOTTA SALATA
We don't grow enough asparagus here on this farm for everybody. So luckily Park Ridge Organics and Olden Organics have been keeping me fully stocked this asparagus season. The milk from my family's farm is all used by BelGioioso to make Italian cheeses here in Wisconsin. One of those cheeses is Ricotta Salata. Called The Italian Feta, it has all the saltiness, and firm, crumbly texture. But it has more of a clean milky flavor without the funkiness of Feta. Promise me you'll try this cheese in a salad this summer.
This pizza is the perfect example of a few super simple, local ingredients coming together to make something fantastic. It's a lighter pizza for warm summer nights when you're not in the mood for a heavy meal, but you've had a few drinks and you don't really feel like cooking.
