We grew some gorgeous poblanos this year, and so did Park Ridge Organics. Every Summer, poblano peppers are ready the same time sweet corn is ready (often the same week). That's nature's way of telling us they'll taste great together. And she's right. She's always right.
So here is a classic Mexican dish. Just heat it up, and serve with warm corn tortillas or a big bag of tortilla chips. Very comforting and so delicious.
Rajas Poblanas is all about the poblanos cut into "rajas", or strips. Sizzled with onions and some fresh, wood-fired kernels of corn, and bathed in cream and cheese. It's the perfect food. Ridiculously simple with just a couple fresh-picked ingredients a few steps from our pizza shop.
INGREDIENTS: WOOD GRILLED FRESH LOCAL SWEETCORN & POBLANO PEPPERS, SAUTEED ONIONS, CHEESY CREAM SAUCE (Milk, cream, Cheese [cultured milk, cream, water, salt, Enzymes, lactic acid], chili powder, salt, spices, corn starch), COTIJA CHEESE (cultured milk, salt, enzymes)
