A couple years ago, I kind of made this pizza as a joke. A few regular customers asked for a Liver & Onions Pizza every time they were here. It was our thing. We'd laugh about it. And then I made a batch. And it sold faster than most of my pizzas, and I regularly still have people asking for it. So here it is again!
We were raised that if you respect animals, you waste nothing. So we had liver (and tongue) regularly when I was growing up. It wasn't my favorite thing, and I think the only reason I like it now is due to nostalgia. That, and the fact that it's now considered one of the most nutrient-dense superfoods on the planet. This really turned out great. I guess the joke's on me.
