MOZZARELLA & PROVOLONE
This lamb came to me from the local County Fair. The kids put so much love and work into raising the sheep right, so I wanted to do something special with it. I cooked down a soffritto (local organic celery, onions, & carrots) and added seared lamb, tomatoes, garlic, red wine, and I cooked it down all day. I finished it with a little cream and parmesan. Everything on this pizza came from this zip code, including the wine and garlic. If you like lamb in general, you will absolutely adore this bolognese-style lamb ragu. It's something slightly different but still so comforting and full of flavor. I hope you love this one!
