I think these ramps are the most expensive ingredient I've ever put on a pizza. It's all labor -- paying someone to take the time to find them, harvest them, and clean them for us. But they were worth every penny. If you've never had a ramps, they're also called 'wild leeks'. They have a mild oniony flavor with a more garlicky aroma. I grilled these, coarsely chopped them, and paired them with some tender and juicy smoked chicken. The chicken is great, but the star of this pizza's flavor is the veg. You see the pizza in the photo here? I ate that entire thing alone in a few minutes. So incredible.
