If you've been following this grand experiment from the beginning, you already know about my deep love affair with unripe, green tomatoes. It's pure nostalgia for me. Not because of the greatest movie ever made. Because since childhood, every early fall, after hundreds of quarts of tomatoes have been put up for winter, after the thought of peeling or cutting another tomato could make you cry a little, and after the plants give up, but before the first cold night turns their skin tough, we pick the green and blushing tomatoes, too.
Millions of pounds of perfectly edible fruit is trashed every season because most people don't yet appreciate how precious and precisely seasonal this treat can be. Green tomato sauce with onions over toast, green tomato & jalapeño salsa, simple roasted green tomatoes is perfect with rice, or pork or beef or chicken. And, of course, fried green tomatoes. Green tomatoes never really registered as tomatoes in my young mind. To me they were this entirely other thing that showed up on the table to let me know the nights were turning colder. A hard, dense, meaty green veggie that takes on whatever flavors you choose to marry with it.
This year I think I finally figured out how to replicate the exact flavor of Fried Green Tomatoes - on a pizza. I hope you love this.
