Or if you've heard of the chain Portillo's OR if you've ever been to Chicago in your life, you probably have a good idea. Every bit as popular as Chicago style pizza, the Italian Beef Sandwich bubbled to the surface of Chicago's melting pot in the 1920's. New Italian immigrants worked their magic on slabs of the least expensive cuts of beef; cooking it painstakingly low and slow, chilling it, then shaving it into simmering au jus. The sopping slices are laid out on some crusty french bread and topped with a smattering of giardiniera (Italian pickled veg). It can be topped with cheese or served with a cup of the au jus, but one thing is inevitable... it's going to drip down to your elbows. That's part of the fun.\u003c\/p\u003e\n\u003cp\u003eI did all the same things for this pizza. And that 48 hour slow cook\/chill\/shave\/au jus process is really no joke. Do it right or don't do it. I thicken the au jus slightly and use it as the sauce beneath the shaved Italian beef for this pizza. And I didn't make the giardiniera this time. I grabbed some that was made in Chicago for authenticity's sake.
