So simple, just slabs of briny feta cheese on a pan with some fresh tomatoes and slices of red onion, bathed in olive oil and a squeeze of lemon. Maybe some fresh herbs. Baked until toasty and then tossed over pasta or beans or slathered onto bread. It's one of my favorite things and I don't know why I didn't think of doing it as a pizza earlier.
