Louis and Jenny Averbeck are the 6th generation on their family farm about 2 miles Southwest of our own family farm. Their cows enjoy seasonal pasture grazing, and the Averbecks take great pride in the care and stewardship of their family farm.
They are making cheese that is A1 casein free.
What the heck does that mean?
Well, there are many folks who mistakenly believe they are lactose intolerant, or who feel cruddy after eating a lot of dairy. But in fact, many of these people don't have a lactose issue, but rather their bodies are sensitive to the naturally occurring A1 casein found in most dairy. Clearview Dairy's cheese is made only from cows producing the more easily digestible A2 casein. It's a more easily digestible cheese that won't cause inflammation for the folks who love cheese that typically doesn't love them back.
